When you take your favorite food dish to a football or hockey party or a family gathering, you are really going to a potluck? Our grandparents did it all the time. No one could really afford to entertain large crowds of people so everyone would bring their specialty recipe cooked to perfection and ready to share. Sometimes, if you were lucky, there would be printed recipe cards beside some of the wonderful creations so you could try them at home. Next time you are invited to one of these gatherings, tell them you would love to come to their potluck and then prepare one of the recipes from Comfy Country Creations web page to take with you.

Fruit Crisp

Your best friend has just phoned to say her sister's in town and wants to see you. She has invited you for a coffee and "would you bring one of your famous deserts?" You don't have a thing you could take! This quick prepare desert will have you saved in no time - especially if you have the "crumble" part already prepared and waiting in your fridge.

Fruit of any kind ~ fresh or frozen ~ enough for at least a one inch layer in the bottom of a baking dish.
  • 1/2 cup butter or margarine
  • 3/4 cup rolled oats (quick cook kind)
  • 3/4 cup brown sugar
  • 3/4 cup flour
  • 1/4 tsp. cinnamon
  • 1/4 tsp. cloves
Mix these five ingredients to crumb stage.
Place fruit in bottom of a dish. Place crumble over the top and press down slightly.
Bake at 350 degrees for 40 to 45 minutes.
**NOTE**
Can be baked in the microwave on high for 14 minutes ~ turning once at ½ time.
**Bonus**
Increase the "crumble" part of the recipe as many times as you like. Keep it in a sealed container in the fridge. It's great to have on hand for emergencies or to be used for individual servings with several different kinds of fruit or as one dish.

Carrot & Beet Loaf

  • 1 cup oil
  • 1 1/2 cups sugar
  • 3 egg yolks
  • 1 tsp vanilla
  • 1 cup shredded raw beets
  • 1 cup shredded raw carrots
  • 2 tsp baking powder
  • 2 cups flour
  • 2 tsp cinnamon
  • 1/2 cup nuts (optional)
  • 3 egg whites

Beat egg whites until stiff. Set aside. Mix all other ingredients in order listed. Fold in egg whites. Mix well. Bake in a loaf pan at 350 degrees for 30 to 35 minutes. Freezes well.

Sugared Peanuts

  • 2 cups sugar
  • 1 cup water
  • 4 cups peanuts (unsalted is best for flavor)
Put all three ingredients into a dutch oven. Heat, stirring often with a wooden spoon - until boiling. Boil on medium & stir continuously for 10 minutes - until mixture is crystallized. Remove from heat immediately and quickly spread in a single layer on ungreased baking sheet with sides. Bake in 300-degree oven for 15 minutes. Shake or stir. Bake for another 15 minutes. Loosen peanuts with pancake flipper. Cool. Store in airtight container. Makes approx 8 cups. Freezes.

Baking Powder Biscuits

  • 2 cups four
  • 4 tsp. baking powder
  • 1 tsp. salt**
  • 1/4 cup shortening or margarine
  • 1 cup milk

Mix dry ingredients together. Blend in shortening to crumble consistency. Make a well in dry ingredients. Add milk. ONLY MIX UNTIL MOIST ~ over mixing will cause the biscuits not to rise as well. Turn dough onto lightly floured board and knead lightly for a FEW MINUTES. Pat to desired thickness (I like ¾ to 1 inch). Cut dough with glass, cookie cutters or knife. Place on ungreased baking pan and bake at 450 degrees for 12 to 15 minutes or until nicely browned. Makes 8 to 14 biscuits depending on what is used to cut them out.
**NOTE**
Omit salt if using margarine. Recipe can be easily doubled or tripled.
